Build a Mini Pizza!
On warm summer afternoons I like quick, healthy meals that don't involve a lot of cooking. The kids want something fast that they can eat while climbing trees outside. So one of my favorite foods is the mini pizza.
They are super easy to make, here's how...
Pick a bottom:
Whole wheat toast
Sourdough
Millet Rice bread
Tortilla
Thin slice of chicken or turkey
Pick a Sauce:
Tomato paste
Pasta sauce
Pesto
Sliced tomatoes
Pick a Veggie:
Grated zucchini squash, carrots or eggplant
Add a dash of salt and garlic powder to taste
Top with your favorite cheese, some ideas include;
Classic mozzarella
Rice Cheese
Pine Nuts
Feta
Warm in a toaster oven, sprinkle with fresh cut basil and enjoy!
