Happy Birthday Banana Bread

Today is my beloved Seth's happy birthday! The kids and I baked him his favorite, a banana bread birthday cake! Here's how we roll...

Ingredients

1 cup honey, agave, or raw sugar
1/2 cup room temp. butter
3 very ripe bananas
2 cups flour (whole wheat, buckwheat and rice all OK)
1/2 teaspoon of baking soda
1/2 cup whole milk
2 tablespoons whole milk yogurt
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon all spice
1 teaspoon ginger
1/2 teaspoon salt
1/2 cup walnuts
1/2 cup raisins

Preheat to 350
Oil your pan of choice
Sift together the flour, baking soda, salt and spices. In another bowl combine the sugar, butter, mashed banana, vanilla, milk, and yogurt.

Add the wet to dry and mix well. Pour into pan and bake for about 1 hour and 10 minutes, for muffins bake for about 35 minutes.


We made a double batch and used the second half to make muffins for church
