Camping Part One : Preperation


The best part of camping is the food. Yummy fire roasted dishes and treats. Here are some of my favorite camping recipes.


Wheat-free, Sugar-free Oatmeal Breakfast Bars


We call these "fruity oaty bars", people who have seen the movie "Serenity" are chuckling or saying "Miranda" LOL At any rate, they are a great and an easy breakfast treat to make before the trip and have on hand.


Bar Mix:
1 1/4 cups rice flour
1 1/4 cups oats
1/4 cup stevia, agave or maple syrup
3/4 cup butter (soft) or olive oil
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons vanilla extract
2 Eggs

Fruit:
About 10 oz of your favorite fruit spread or pureed plums


1. Preheat oven to 350°F (175°C). Lightly grease a 13 x 9 x 2-inch baking pan.

2. For bar mix, in large mixing bowl combine all ingredients. Stir until well
mixed. Hold out 1 cup of mixture; press remaining mixture into prepared baking pan.

3. For filling, spread fruit to within 1/2-inch from edge of crumb mixture; sprinkle with reserved mixture.

4. Bake for 22 to 27 minutes or until edges are lightly browned. Cool completely. Cut into bars.

Sugar-free, homemade Marshmallow Recipe


Easy Wheat-free Graham Crackers

Homemade Chocolate Bars

1 cup cocoa powder
1/2 cup stevia or agave
1 cup coconut oil
1 teaspoon vanilla

Heat everything together in a pan, stirring constantly until well mixed and coconut oil is melted and stevia powder is not crunchy. Transfer to a buttered mold or baking dish, place in fridge over night, cut into bars or chips.


Fire Pockets

These are great to make on the trip and taste WONDERFUL!

Chop yams, red peppers, onions and yellow squash into small pieces. Wrap them n tin foil leaving a small opening. Pour either soy sauce, Braggs or beer (one table spoon per one cup of veggies) into pocket, seal and place on the side of the fire for about a half an hour. Remove with tongs, let cool to the touch and enjoy!
